Ingredients

  • 4 medium zucchini
  • 1 pound ground beef

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Slice each zucchini in half lengthwise. Scoop out the flesh, leaving about 1/4 inch thick shells.
  3. Chop the zucchini flesh and set aside.
  4. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  5. Add the diced onion, minced garlic, dried oregano, dried basil, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes until the onions are translucent.
  6. Add the chopped zucchini flesh to the skillet and cook for another 2-3 minutes until the zucchini is tender.
  7. Remove the skillet from heat and stir in 3/4 cup of marinara sauce, 1/2 cup of shredded mozzarella cheese, grated Parmesan cheese, and chopped fresh parsley.
  8. Spoon the filling into the hollowed out zucchini shells, dividing it equally among them.
  9. Place the stuffed zucchini in a baking dish and pour the remaining 1/4 cup of marinara sauce over the top.
  10. Cover the dish with foil and bake for 25 minutes.
  11. Remove the foil and sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the zucchini.
  12. Bake uncovered for an additional 10 minutes or until the cheese is melted and golden.
