Ingredients
- 8 chicken drumsticks
- 3 peaches, peeled, pitted, and diced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch
- 1/4 cup water
- Fresh parsley, for garnish
Directions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine the diced peaches, honey, soy sauce, olive oil, minced garlic, black pepper, salt, and red pepper flakes (if using). Mix well.
- Add the chicken drumsticks to a large ziplock bag and pour the peach marinade over them. Seal the bag and marinate in the refrigerator for at least 30 minutes.
- Remove the drumsticks from the marinade, reserving the marinade for later use.
- Place the drumsticks on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the skin is crispy.
- While the drumsticks are baking, pour the reserved marinade into a small saucepan and bring it to a simmer over medium heat.
- In a separate bowl, whisk together the cornstarch and water until smooth. Slowly pour the cornstarch mixture into the simmering marinade, stirring constantly until the sauce thickens.
- Once the drumsticks are done, remove them from the oven and brush them with the thickened peach glaze. Return them to the oven for an additional 5 minutes to allow the glaze to caramelize.
- Garnish with fresh parsley and serve hot. Enjoy!
