  • 1 package refrigerated pie crusts

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent and fragrant.
  3. Add the diced carrots, celery, frozen peas, frozen corn, and diced potatoes to the skillet. Stir and cook for about 5 minutes, until the vegetables start to soften.
  4. In a separate bowl, whisk together the vegetable broth, milk, all-purpose flour, dried thyme, dried rosemary, salt, and black pepper. Pour the mixture into the skillet with the vegetables.

  7. Unroll one pie crust and press it into the bottom and sides of a 9-inch pie dish. Pour the vegetable filling into the crust.
