Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 cup diced potatoes
- 1 cup vegetable broth
- 1 cup milk
- 2 tablespoons all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package refrigerated pie crusts
Directions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until they become translucent and fragrant.
- Add the diced carrots, celery, frozen peas, frozen corn, and diced potatoes to the skillet. Stir and cook for about 5 minutes, until the vegetables start to soften.
- In a separate bowl, whisk together the vegetable broth, milk, all-purpose flour, dried thyme, dried rosemary, salt, and black pepper. Pour the mixture into the skillet with the vegetables.
- Stir well and let the mixture simmer for about 10 minutes, until the sauce thickens and coats the vegetables.
- Remove the skillet from heat and let it cool slightly.
- Unroll one pie crust and press it into the bottom and sides of a 9-inch pie dish. Pour the vegetable filling into the crust.
- Unroll the second pie crust and place it on top of the filling. Trim any excess crust and press the edges together to seal. Cut a few small slits on top of the crust to allow steam to escape.
- Bake the pot pie in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
- Remove from the oven and let it cool for a few minutes before serving. Enjoy!
