  • 3 medium zucchinis, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels

  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat some olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, jalapeno pepper, and red bell pepper to the skillet and cook for another 2 minutes.
  4. Add the sliced zucchini, black beans, corn, diced tomatoes, cumin, chili powder, paprika, cayenne pepper, salt, and black pepper to the skillet. Stir well to combine.
  5. Continue cooking for another 5 minutes, or until the zucchini is tender and the flavors have melded together.
