  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack or Cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup minced red onion
  • 1/4 cup chopped fresh cilantro
  • Sour cream, guacamole, and salsa for serving

Directions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the shrimps, chili powder, cumin, paprika, salt, and black pepper. Cook for 3-4 minutes until the shrimps are pink and cooked through. Remove from heat and set aside.
  2. Place one tortilla on a clean surface. Sprinkle a handful of cheese evenly over half of the tortilla.
  3. Spread some diced tomatoes, minced red onion, and chopped cilantro over the cheese.
  4. Arrange a layer of cooked shrimp on top.
  5. Sprinkle some more cheese on the shrimp layer.
  6. Fold the tortilla in half over the filling, pressing down gently.
  7. Repeat the process with the remaining tortillas and filling ingredients.
  8. Heat a large non-stick skillet over medium heat. Place one quesadilla at a time in the skillet and cook for 2-3 minutes on each side, until golden brown and the cheese is melted.
