Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg

- 1/4 teaspoon salt
- 1 cup buttermilk
- 1/2 cup hot water
- 1 batch of Marshmallow Filling (see recipe below)
Directions
- Preheat your oven to 350 degrees F (175 degrees C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture, alternating with the buttermilk and hot water. Begin and end with the dry ingredients, mixing just until combined.
- Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the cookies spring back when lightly touched.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once the cookies have cooled, spread a generous amount of Marshmallow Filling on the flat side of one cookie. Top with another cookie, pressing gently to create a sandwich.
- Repeat with the remaining cookies and filling.
