Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup confectioners' sugar
  • 1 cup unsalted butter, cold and cubed
  • 4 cups diced rhubarb
  • 1 1/2 cups granulated sugar
  • 1/4 cup cornstarch
  • 4 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cream of tartar

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine the flour and confectioners' sugar. Cut in the cold butter using a pastry cutter or two knives until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared baking dish to form the crust. Bake it in the preheated oven for 15-20 minutes, or until lightly golden.
  4. In a saucepan, combine the diced rhubarb, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the rhubarb softens, about 10-15 minutes.
  5. In a separate bowl, whisk together the eggs, vanilla extract, and salt. Gradually pour the rhubarb mixture into the beaten eggs while whisking constantly.
  6. Pour the rhubarb and egg mixture back into the saucepan and cook over low heat for an additional 2-3 minutes, stirring continuously. Remove from heat and let it cool slightly.
  7. In a clean mixing bowl, beat the egg whites and cream of tartar on medium speed until foamy. Gradually add in the granulated sugar while beating continuously until stiff peaks form.
  8. Spread the rhubarb filling evenly over the baked crust in the baking dish. Top it with the meringue mixture, spreading it out and creating decorative peaks with a spatula.
  9. Bake in the preheated oven for 15-20 minutes, or until the meringue is golden brown.
  10. Allow the squares to cool completely before cutting them into desired sizes.
  11. Serve and enjoy!
