Ingredients

  • For Cottage Cheese Dumplings:
  • 4 cups whole milk
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon semolina
  • For Sweetened Milk:
  • 4 cups whole milk
  • 1 cup sugar
  • 1 teaspoon cardamom powder
  • A pinch of saffron strands
  • Chopped nuts for garnish (e.g. pistachios, almonds)

Directions

  1. To Make Cottage Cheese Dumplings:
  2. Heat the milk in a large saucepan over medium heat until it starts to boil.
  3. Stir in the lemon juice and continue stirring gently until the milk curdles and separates into whey and curds.
  4. Line a strainer with cheesecloth and pour the curdled milk into it. Rinse the curds under cold water to remove any lemon flavor.
  5. Gather the edges of the cheesecloth and squeeze out any excess water. Hang the cheesecloth for 30 minutes to drain any remaining liquid.
  6. Transfer the drained cottage cheese to a mixing bowl. Add all-purpose flour, baking powder, and semolina. Knead the mixture until it forms a smooth dough.
  7. Shape the dough into small balls and set aside.
  8. To Make Sweetened Milk:
  9. In a large saucepan, heat the milk over medium heat. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
  10. Once the milk comes to a boil, reduce the heat to low and add the sugar, cardamom powder, and saffron strands. Stir well to dissolve the sugar and infuse the flavors.
  11. Gently add the cottage cheese dumplings to the sweetened milk. Cook on low heat for 30 minutes, stirring occasionally to prevent sticking.
  12. Remove from heat and let the Ras Malai cool to room temperature.
  13. Garnish with chopped nuts, such as pistachios and almonds.
  14. Refrigerate for a few hours to allow the flavors to develop and serve chilled.
