Ingredients

  • 4 boneless pork chops
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the pork chops with salt, pepper, and paprika on both sides. Sear the pork chops in the skillet for 2-3 minutes per side, or until browned. Remove the pork chops from the skillet and set aside.
  3. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and the garlic is fragrant.
  4. Add the rice, chicken broth, cream of mushroom soup, dried thyme, and dried rosemary to the skillet. Stir well to combine.
  5. Bring the mixture to a boil. Reduce the heat to low, cover the skillet, and simmer for 10 minutes.
  6. Remove the skillet from the heat and stir in half of the shredded cheddar cheese.
  7. Transfer the rice mixture to a greased casserole dish. Place the seared pork chops on top of the rice.
  8. Cover the casserole dish with foil and bake for 25 minutes.
  9. After 25 minutes, remove the foil and sprinkle the remaining shredded cheddar cheese on top of the pork chops. Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove the casserole from the oven and let it rest for 5 minutes before serving.
