Ingredients

  • 2 pounds pork shoulder, diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces shiitake mushrooms, sliced
  • 1 can (28 ounces) crushed tomatoes
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced pork and cook until browned on all sides. Remove the pork from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  3. Add the sliced shiitake mushrooms and cook for another 5 minutes, until they begin to soften.
  4. Return the browned pork to the pot and add the crushed tomatoes, chicken broth, tomato paste, dried thyme, dried oregano, salt, and black pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the ragu simmer for 1 hour, stirring occasionally.
  6. After 1 hour, remove the lid and continue simmering for another 30 minutes to thicken the sauce.
  7. Taste and adjust the seasoning if needed.
  8. Serve the Pork and Shiitake Mushroom Ragu over cooked pasta or creamy polenta.
  9. Garnish with grated Parmesan cheese and enjoy!
