Ingredients

  • 1 cup basmati rice
  • 1/2 cup roasted peanuts
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh cilantro, for garnish

Directions

  1. Wash the basmati rice thoroughly and soak it in water for 15 minutes. Drain and set aside.
  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  3. Add finely chopped onions and slit green chilies. Sauté until the onions turn golden brown.
  4. Add ginger-garlic paste and sauté for another minute.
  5. Add turmeric powder, red chili powder, and salt. Mix well.
  6. Add the soaked and drained basmati rice to the pan. Stir gently to coat the rice grains with the spices.
  7. Add 2 cups of water and bring it to a boil. Reduce the heat to low, cover the pan, and cook for about 10 minutes or until the rice is cooked and the water is absorbed.
  8. Meanwhile, coarsely grind the roasted peanuts in a blender or food processor.
  9. Once the rice is cooked, remove it from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and add the ground peanuts. Mix well.
  11. Garnish with fresh cilantro and serve hot.
