Ingredients

  • 8 oz orzo pasta
  • 1 block of tofu, pressed and cubed
  • 2 cups cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Directions

  1. Cook the orzo pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the tofu cubes and fry until crispy and golden brown on all sides. Remove from the skillet and set aside.
