Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper (optional, for heat)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup chicken broth
- 1 cup green olives, pitted
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Directions
- In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, ground cinnamon, turmeric, paprika, and cayenne pepper (if using). Mix well to form a paste.
- Add the chicken thighs to the bowl and rub the spice paste all over the chicken, ensuring it is well coated. Let the chicken marinate for at least 30 minutes.
- Heat a large skillet or Dutch oven over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes.
- Place the chicken thighs skin-side down in the skillet and cook until the skin becomes crispy and golden brown, about 5 minutes. Flip the chicken thighs and cook for another 5 minutes.
- Add the diced tomatoes, chickpeas, and chicken broth to the skillet. Stir well to combine. Season with salt and pepper, to taste.
- Simmer the chicken and vegetables over low heat, covered, for about 40-50 minutes or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.
- Add the green olives to the skillet and cook for an additional 5 minutes.
- Remove the skillet from heat and garnish with freshly chopped cilantro.
- Serve the Moroccan Chicken Sann hot with couscous or rice. Enjoy!
