Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced (optional)
- 1 can (14 ounces) black beans, rinsed and drained
- 1 can (14 ounces) corn kernels, drained
- 1 can (14 ounces) diced tomatoes
- 1 cup salsa
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 12 lasagna noodles, cooked according to package instructions
- 2 cups shredded Mexican blend cheese
- 1 cup crushed tortilla chips
- Chopped fresh cilantro, for garnish
Directions
- In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, red bell pepper, and jalapeno pepper (if using). Cook for another 5 minutes, until the vegetables are softened.
- Stir in the black beans, corn kernels, diced tomatoes, salsa, chili powder, cumin, paprika, salt, and pepper. Simmer for 10 minutes, allowing the flavors to meld together.
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of the meat and vegetable mixture on the bottom of a 9x13-inch baking dish. Top with a layer of cooked lasagna noodles, followed by a layer of shredded cheese and crushed tortilla chips. Repeat the layers until all of your ingredients are used, ending with a layer of cheese and tortilla chips on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
