  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 12 lasagna noodles, cooked according to package instructions
  • 2 cups shredded Mexican blend cheese
  • 1 cup crushed tortilla chips
  • Chopped fresh cilantro, for garnish

Directions

  1. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, red bell pepper, and jalapeno pepper (if using). Cook for another 5 minutes, until the vegetables are softened.
  2. Stir in the black beans, corn kernels, diced tomatoes, salsa, chili powder, cumin, paprika, salt, and pepper. Simmer for 10 minutes, allowing the flavors to meld together.
  3. Preheat your oven to 375°F (190°C).
  4. Spread a thin layer of the meat and vegetable mixture on the bottom of a 9x13-inch baking dish. Top with a layer of cooked lasagna noodles, followed by a layer of shredded cheese and crushed tortilla chips. Repeat the layers until all of your ingredients are used, ending with a layer of cheese and tortilla chips on top.
  5. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
