Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 cups peeled, cored, and thinly sliced apples
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon granulated sugar (for topping)

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Add the cold cubed butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs. Add the sour cream and vanilla extract to the beaten eggs and mix well.
  5. Pour the egg mixture into the dry ingredients. Stir until just combined.
  6. Fold in the sliced apples and chopped walnuts or pecans, if using.
  7. Transfer the batter to the prepared cake pan. Smooth the top with a spatula.
  8. Sprinkle the tablespoon of sugar evenly over the top of the batter.
  9. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  11. Transfer the cake to a wire rack to cool completely before serving.
