  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups canned pumpkin puree
  • 1/2 cup whole milk
  • For the Streusel Topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, cold and cubed

Directions

  1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
  3. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined and smooth.
  4. Add the eggs one at a time, whisking after each addition. Stir in the vanilla extract.
  5. Add the pumpkin puree and milk to the wet ingredients and mix until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Fill each muffin cup about 3/4 full with the batter.
  8. In a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon for the streusel topping. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  9. Sprinkle the streusel topping evenly over each muffin cup.
  10. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
