Ingredients

  • 4 large egg yolks
  • 2 teaspoons vanilla extract

Directions

  1. In a large mixing bowl, whisk together the flour and salt.
  2. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your hands to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Slowly add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat your oven to 425°F (220°C).
  5. On a lightly floured surface, roll out the chilled dough into a circle slightly larger than your pie dish. Carefully transfer the dough to the pie dish and press it into the bottom and sides.
