  5. Remove the skillet from heat and let the filling cool slightly.
  6. Lay an egg roll wrapper on a clean surface, with one corner pointing towards you.
  7. Place about 1/4 cup of the pork and vegetable filling onto the center of the wrapper.
  8. Fold the corner pointing towards you over the filling, tucking it tightly.
  9. Fold the two side corners over the folded edge, creating an envelope shape.
  10. Brush the top corner with beaten egg to seal the egg roll.
  11. Roll the egg roll away from you, tightly sealing the edges as you go.
  12. Repeat with the remaining wrappers and filling.
  13. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C).
