Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries
  • For the streusel topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, cold

Directions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries.
  6. In a small bowl, mix together the flour and sugar for the streusel topping. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs.
  7. Evenly divide the muffin batter among the prepared muffin cups, filling each cup about 2/3 full.
  8. Sprinkle the streusel topping over each muffin, pressing it lightly into the batter.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  10. Remove from the oven and let cool in the tin for 5 minutes, then transfer the muffins to a wire rack to cool completely.
