- 1 cup raisins
- 3 cups granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 pouch (3 ounces) liquid pectin
Directions
- In a large saucepan, combine the blueberries, raisins, sugar, lemon juice, lemon zest, cinnamon, nutmeg, and salt.
- Cook over medium heat, stirring occasionally until the sugar is dissolved and the mixture comes to a boil.
- Reduce the heat to low and let simmer for 20-25 minutes, stirring occasionally.
- Remove the saucepan from the heat and stir in the liquid pectin. Mix well to combine.
- Skim off any foam from the surface of the jam.
- Pour the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims of the jars clean.
- Cover the jars with sterilized lids and screw on the bands until fingertip tight.
- Process the jars in a boiling water bath for 10 minutes to seal them.
- Remove the jars from the water bath and let them cool completely on a towel-lined countertop.
