Ingredients

  • 4 cups fresh blueberries
  • 1 cup raisins
  • 3 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 pouch (3 ounces) liquid pectin

Directions

  1. In a large saucepan, combine the blueberries, raisins, sugar, lemon juice, lemon zest, cinnamon, nutmeg, and salt.
  2. Cook over medium heat, stirring occasionally until the sugar is dissolved and the mixture comes to a boil.
  3. Reduce the heat to low and let simmer for 20-25 minutes, stirring occasionally.
  4. Remove the saucepan from the heat and stir in the liquid pectin. Mix well to combine.
  5. Skim off any foam from the surface of the jam.
  6. Pour the hot jam into sterilized jars, leaving 1/4-inch headspace. Wipe the rims of the jars clean.
  7. Cover the jars with sterilized lids and screw on the bands until fingertip tight.
  8. Process the jars in a boiling water bath for 10 minutes to seal them.
  9. Remove the jars from the water bath and let them cool completely on a towel-lined countertop.
  10. Check the lids for proper seal after 24 hours. If the center of the lids can be pushed down, the jars are not sealed and should be refrigerated.
  11. Store the sealed jars in a cool, dark place for up to 1 year. Once opened, keep refrigerated.
