This hibachi-style fried rice recipe is a perfect combination of colorful veggies, tender chicken, and fluffy jasmine rice stir-fried in a savory garlic soy sauce. It's a popular dish at hibachi restaurants, and now you can easily recreate it in your own kitchen.

Ingredients

  • 2 cups cooked jasmine rice, chilled
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 chicken breast, diced
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Directions

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add beaten eggs and scramble until cooked. Remove from skillet and set aside.
  2. Add remaining vegetable oil to the skillet. Add diced chicken and cook until no longer pink. Remove from skillet and set aside.
  3. Add carrots, bell peppers, onions, and garlic to the skillet. Stir-fry until vegetables are tender.
  4. Push vegetables to one side of the skillet and add chilled rice to the empty side. Break up any clumps of rice and stir-fry for 2-3 minutes.
  5. Add soy sauce, oyster sauce, and sesame oil to the skillet. Stir well to evenly coat the rice and vegetables.
  6. Return cooked eggs and chicken to the skillet. Stir-fry everything together for another 2-3 minutes.
  7. Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds before serving.
