Ingredients
- 4 large russet potatoes
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- Salt and pepper, to taste
- 2 tablespoons chopped fresh parsley
Directions
- Preheat oven to 400°F. Wash and dry the potatoes.
- Place a potato between two chopsticks and make thin slices (about 1/8 inch apart) across the potato, being careful not to cut all the way through.
- Mix melted butter and minced garlic together. Brush the potatoes with the butter mixture, making sure to get in between the slices.
- Season the potatoes with salt and pepper, then place them on a baking sheet.
- Bake for 40-45 minutes, or until the potatoes are crispy on the outside and tender on the inside.
- Sprinkle with chopped parsley before serving.
