Ingredients

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/4 cup tomato paste
  • 1 cup enchilada sauce
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Optional toppings: sour cream, guacamole, salsa, chopped green onions

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large skillet, heat some oil over medium heat. Add the chopped onion and minced garlic, and cook until softened and fragrant.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in the cumin, chili powder, paprika, oregano, salt, and pepper. Cook for an additional 2-3 minutes to allow the spices to bloom.
  5. Add the tomato paste and enchilada sauce to the skillet. Stir until well combined and cook for another 5 minutes to let the flavors meld together.
  6. Warm the corn tortillas in a dry skillet or in the microwave for a few seconds to make them pliable.
  7. Place a spoonful of the ground beef mixture onto each corn tortilla and roll it up tightly. Arrange the enchiladas seam-side down in the greased baking dish.
  8. Pour any remaining enchilada sauce over the rolled enchiladas and sprinkle the shredded cheddar cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbling.
  10. Garnish with chopped fresh cilantro and serve hot with your favorite toppings like sour cream, guacamole, salsa, or chopped green onions.
