Ingredients

  • 1 lb of large shrimp, peeled and deveined
  • 8 oz of rice noodles
  • 1 cup of shredded carrots

  • 1 cup of bean sprouts
  • 1/2 cup of chopped fresh cilantro
  • 1/4 cup of chopped peanuts (optional)
  • For the marinade:
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of honey
  • 1 tablespoon of lime juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated fresh ginger
  • For the dressing:
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of honey
  • 1 tablespoon of lime juice
  • 1 clove of garlic, minced
  • 1/2 teaspoon of grated fresh ginger
  • 1/4 teaspoon of red pepper flakes (optional)

Directions

  1. Soak the rice noodles in hot water for about 10 minutes or until they are soft. Drain and set aside.
  2. Preheat your grill to medium-high heat.
  3. In a small bowl, whisk together all the marinade ingredients. Add the shrimp to the bowl and toss to coat. Let the shrimp marinate for about 10 minutes.
  4. While the shrimp is marinating, prepare the dressing. In another small bowl, whisk together all the dressing ingredients. Set aside.
  5. Thread the marinated shrimp onto skewers and grill for about 2-3 minutes per side, or until they are pink and opaque. Remove from the grill and set aside.
