Ingredients

  • 1 kg kabocha squash, peeled, seeded, and cut into small cubes
  • 500g store-bought gnocchi
  • 1 cup walnuts, roughly chopped
  • 200g scamorza cheese, shredded
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Directions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Spread the kabocha squash cubes on the baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat. Roast in the oven for 25-30 minutes or until the squash is tender and slightly caramelized.
  3. While the squash is roasting, bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions, then drain.
  4. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  5. Add the cooked gnocchi to the skillet and toss to coat in the garlic butter.
  6. Add the roasted kabocha squash and chopped walnuts to the skillet. Stir gently to combine.
  7. Sprinkle the shredded scamorza cheese over the gnocchi and cover the skillet with a lid. Cook for an additional 2-3 minutes, or until the cheese has melted.
  8. Remove the skillet from heat and sprinkle the fresh sage over the dish. Season with salt and pepper to taste.
  9. Serve the gnocchi with kabocha, walnuts, and scamorza in bowls or plates. Garnish with grated Parmesan cheese for an extra burst of flavor.
  10. Enjoy your delicious homemade gnocchi dish with your loved ones!
