These gingerbread cheesecake bars are a perfect blend of rich, creamy cheesecake and warm, spicy gingerbread flavors. With a crunchy gingersnap crust and a dollop of whipped cream on top, these bars are a delightful treat for the holiday season.

Ingredients

  • 2 cups gingersnap cookie crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/4 cup molasses
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • Whipped cream for topping

Directions

  1. Preheat oven to 325°F and line a 9x13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine gingersnap crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the prepared pan.
  3. In a separate bowl, beat cream cheese, 1/2 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in molasses, ginger, cinnamon, nutmeg, and cloves until well combined. Pour over crust.
  5. Bake for 35-40 minutes or until set. Let cool completely, then refrigerate for at least 2 hours.
  6. Cut into bars and serve with a dollop of whipped cream on top.
