Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/4 cup cold water
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pitted green olives, chopped
  • 1/4 cup golden raisins, chopped
  • 2 hard-boiled eggs, chopped
  • Vegetable oil, for frying

Directions

  1. In a large bowl, whisk together the flour and salt. Add the cold butter and mix with your fingertips until the mixture resembles coarse crumbs.
  2. Gradually add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Add the ground beef and cook until browned, breaking it up with a spoon. Stir in the cumin, oregano, smoked paprika, salt, and black pepper.
  5. Cook for another 3-4 minutes until the spices are fragrant. Remove from heat and let it cool slightly.
  6. Once the beef mixture has cooled, stir in the olives, raisins, and chopped eggs.
  7. Take the chilled dough and roll it out on a floured surface until it is about 1/8 inch thick. Using a round cookie cutter or a glass, cut out circles from the dough.
  8. Place a spoonful of the beef filling onto one half of each circle. Fold over the other half of the dough to form a half-circle shape. Press the edges together to seal the empanadas.
  9. Heat vegetable oil in a large deep pan or pot over medium-high heat. Once hot, add the empanadas in batches and fry until golden brown, about 3-4 minutes per side.
  10. Remove the empanadas from the oil and drain on paper towels to remove excess oil. Repeat with the remaining empanadas.
  11. Serve the fried empanadas warm with your favorite dipping sauce or salsa.
