Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, cold and diced
- 1/4 cup cold water
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pitted green olives, chopped
- 1/4 cup golden raisins, chopped
- 2 hard-boiled eggs, chopped
- Vegetable oil, for frying
Directions
- In a large bowl, whisk together the flour and salt. Add the cold butter and mix with your fingertips until the mixture resembles coarse crumbs.
- Gradually add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ground beef and cook until browned, breaking it up with a spoon. Stir in the cumin, oregano, smoked paprika, salt, and black pepper.
- Cook for another 3-4 minutes until the spices are fragrant. Remove from heat and let it cool slightly.
- Once the beef mixture has cooled, stir in the olives, raisins, and chopped eggs.
- Take the chilled dough and roll it out on a floured surface until it is about 1/8 inch thick. Using a round cookie cutter or a glass, cut out circles from the dough.
- Place a spoonful of the beef filling onto one half of each circle. Fold over the other half of the dough to form a half-circle shape. Press the edges together to seal the empanadas.
- Heat vegetable oil in a large deep pan or pot over medium-high heat. Once hot, add the empanadas in batches and fry until golden brown, about 3-4 minutes per side.
- Remove the empanadas from the oil and drain on paper towels to remove excess oil. Repeat with the remaining empanadas.
- Serve the fried empanadas warm with your favorite dipping sauce or salsa.
