Ingredients
- 2 pounds of potatoes
- 8 ounces of slab bacon, cut into lardons
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 1 cup of dry white wine
- 1 cup of heavy cream
- 10.5 ounces of Reblochon cheese, cut into thin slices
- Salt and pepper to taste
Directions
- Peel the potatoes and cut them into thick slices. Place them in a pot of salted boiling water and cook until they are tender but still firm. Drain and set aside.
- In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the fat in the skillet.
- Add the sliced onions to the skillet and cook until they are caramelized, about 10 minutes. Add the minced garlic and cook for an additional minute.
- Increase the heat to high and pour in the white wine. Let it simmer for a few minutes until the liquid is reduced by half.
- Reduce the heat to low and pour in the heavy cream. Stir well and season with salt and pepper to taste.
- Preheat the oven to 400°F (200°C).
- Grease a baking dish with butter or cooking spray. Layer half of the cooked potatoes in the bottom of the dish.
- Spread half of the caramelized onions and garlic mixture over the potatoes, followed by half of the crispy bacon.
- Place half of the sliced Reblochon cheese on top of the bacon.
- Repeat the layers with the remaining potatoes, onions and garlic mixture, bacon, and Reblochon cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly, and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve the Tartiflette warm and enjoy the creamy, cheesy goodness!
