Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 cup corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 egg

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is translucent. Drain any excess fat.
  3. Add the kidney beans, diced tomatoes, tomato paste, corn kernels, chili powder, cumin, paprika, oregano, salt, and pepper to the skillet. Stir well to combine and simmer for 10-15 minutes.
  4. In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, melted butter, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
