Ingredients

  • 6 egg yolks
  • 3/4 cup sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 1/4 cup coffee liqueur
  • 24 sponge fingers (ladyfingers)
  • Cocoa powder, for dusting

Directions

  1. In a heatproof bowl, whisk together egg yolks and sugar over a double boiler until pale and thick.
  2. Remove from heat and whisk in mascarpone until smooth.
  3. In a separate bowl, whip heavy cream and vanilla until stiff peaks form.
  4. Gently fold whipped cream into mascarpone mixture.
  5. Combine coffee and coffee liqueur in a shallow dish.
  6. Quickly dip each sponge finger into the coffee mixture and layer them in the bottom of a dish.
  7. Spread half of the mascarpone mixture over the sponge fingers.
  8. Repeat with another layer of soaked sponge fingers and mascarpone mixture.
  9. Cover and refrigerate for at least 4 hours or overnight.
  10. Before serving, dust the top with cocoa powder.
