Ingredients

  • 1 whole chicken (about 4 pounds)

  • 1 tablespoon onion powder
  • 1 teaspoon salt

  • 2 tablespoons water
  • 2 green onions, thinly sliced

Directions

  1. In a small bowl, mix together the soy sauce, hoisin sauce, oyster sauce, Chinese five-spice powder, garlic powder, onion powder, salt, and black pepper.
  2. Remove any giblets from the chicken cavity and pat the chicken dry with paper towels. Place the chicken in a large ziplock bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours, or overnight for best results.
  3. Preheat the oven to 425°F (220°C).
  4. Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken on a rack in a roasting pan, breast side up.
  5. Insert an oven-safe meat thermometer into the thickest part of the chicken thigh, without touching the bone.
