  • 2 lbs bone-in chicken pieces (thighs or drumsticks)

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander

  • 1 cup chicken broth
  • 1 cup canned diced tomatoes
  • 1/2 cup pitted green olives
  • 1/2 cup dried apricots, halved
  • 1/2 cup raisins
  • 1/4 cup slivered almonds
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Directions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season the chicken pieces with salt and pepper.
  3. Place the chicken in the skillet and brown on all sides, about 6-8 minutes.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the chopped onion and minced garlic.
