These grilled chili lime chicken kabobs are a perfect summer recipe. The chicken is marinated in a tangy and spicy sauce, then grilled to perfection. The tanginess of lime and spiciness of chili pepper combine to create a burst of flavors. Serve these kabobs with a side of rice or salad for a complete and satisfying meal.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Wooden or metal skewers

Directions

  1. In a bowl, whisk together olive oil, lime juice, honey, minced garlic, chili powder, cumin, paprika, salt, and black pepper.
  2. Add the chicken cubes to the bowl and toss until well coated in the marinade. Cover the bowl and refrigerate for at least 1 hour, or up to overnight.
  3. If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent them from burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken cubes, bell pepper chunks, and red onion chunks onto the skewers, alternating between each ingredient.
  6. Grill the kabobs for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
  7. Remove the kabobs from the grill and let them rest for a few minutes.
  8. Serve the chili lime chicken kabobs with a side of rice or salad.
  9. Enjoy!
