Ingredients
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tablespoons fresh lime juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Wooden or metal skewers
Directions
- In a bowl, whisk together olive oil, lime juice, honey, minced garlic, chili powder, cumin, paprika, salt, and black pepper.
- Add the chicken cubes to the bowl and toss until well coated in the marinade. Cover the bowl and refrigerate for at least 1 hour, or up to overnight.
- If using wooden skewers, soak them in water for about 30 minutes before grilling to prevent them from burning.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes, bell pepper chunks, and red onion chunks onto the skewers, alternating between each ingredient.
- Grill the kabobs for 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are slightly charred.
- Remove the kabobs from the grill and let them rest for a few minutes.
- Serve the chili lime chicken kabobs with a side of rice or salad.
- Enjoy!
