Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package refrigerated crescent roll dough
  • 2 tablespoons melted butter

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, grated Parmesan cheese, chopped onion, chopped bell pepper, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix well.
  3. Place the chicken breasts on a cutting board and slice them horizontally to create two thin chicken fillets per breast.
  4. Place a chicken fillet on a clean surface and spoon a generous amount of the cheese mixture onto it, leaving a small border around the edges.
  5. Fold the chicken fillet in half to create a pocket, enclosing the cheese mixture. Press the edges firmly to seal. Repeat with the remaining fillets and cheese mixture.
  6. Unroll the crescent roll dough and separate it into triangles.
  7. Place a chicken pocket on each crescent roll triangle and roll it up, starting from the wide end.
  8. Place the cheesy chicken pockets on a baking sheet lined with parchment paper.
  9. Brush the tops of the pockets with melted butter for a golden finish.
  10. Bake in the preheated oven for 20-25 minutes, or until the crescent roll dough is golden brown and the chicken is cooked through.
  11. Remove from the oven and let the pockets cool for a few minutes before serving.
  12. Enjoy these delicious Cheesy Chicken Pockets on their own or with your favorite dipping sauce!
