Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package refrigerated crescent roll dough
- 2 tablespoons melted butter
Directions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded mozzarella cheese, shredded cheddar cheese, grated Parmesan cheese, chopped onion, chopped bell pepper, minced garlic, chopped parsley, dried oregano, salt, and black pepper. Mix well.
- Place the chicken breasts on a cutting board and slice them horizontally to create two thin chicken fillets per breast.
- Place a chicken fillet on a clean surface and spoon a generous amount of the cheese mixture onto it, leaving a small border around the edges.
- Fold the chicken fillet in half to create a pocket, enclosing the cheese mixture. Press the edges firmly to seal. Repeat with the remaining fillets and cheese mixture.
- Unroll the crescent roll dough and separate it into triangles.
- Place a chicken pocket on each crescent roll triangle and roll it up, starting from the wide end.
- Place the cheesy chicken pockets on a baking sheet lined with parchment paper.
- Brush the tops of the pockets with melted butter for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the crescent roll dough is golden brown and the chicken is cooked through.
- Remove from the oven and let the pockets cool for a few minutes before serving.
- Enjoy these delicious Cheesy Chicken Pockets on their own or with your favorite dipping sauce!
