  • 1 cup milk

  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 4 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Directions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft.
  2. Add the chicken pieces to the pot and pour in the chicken broth. Add the bay leaf and dried thyme. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until the chicken is cooked through and tender.
