- 2 pounds chicken (cut into pieces)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup butter
- 1 cup milk
- 1 onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (sliced)
- 4 cups chicken broth
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish

- In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are soft.
- Add the chicken pieces to the pot and pour in the chicken broth. Add the bay leaf and dried thyme. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until the chicken is cooked through and tender.
- While the chicken is simmering, prepare the dumplings. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the milk and mix until a soft dough forms.
