  • 4 cups shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 tablespoons melted butter

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower florets until they are tender but still slightly crisp. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 2 minutes, until the mixture turns golden brown.
  4. Slowly pour in the heavy cream while whisking constantly. Continue whisking until the mixture thickens and comes to a simmer.
  5. Reduce the heat to low and add the cheddar cheese, Parmesan cheese, garlic powder, thyme, basil, nutmeg, salt, and pepper. Stir until the cheeses have melted and the sauce is smooth.
  6. Add the cooked cauliflower to the cheese sauce and stir to coat the florets evenly.
  7. Transfer the cauliflower and cheese mixture to a greased baking dish.
  8. In a small bowl, combine the breadcrumbs with melted butter. Sprinkle the breadcrumb mixture evenly over the cauliflower.
  9. Bake the casserole for 25-30 minutes, or until the top is golden brown and the sauce is bubbly.
  10. Remove from the oven and let it cool for a few minutes before serving.
