Ingredients

  • 4 slices of bacon
  • 2 bolillos (Mexican rolls) or other soft bread rolls
  • 1 cup canned black beans, drained and rinsed
  • 4 large eggs
  • 1 tomato, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and minced
  • 1 lime, juiced
  • Salt and pepper to taste

Directions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Set it aside.
  2. Slice the bolillos (or other soft bread rolls) in half and toast them in the skillet, cut side down, until lightly browned. Remove them from the skillet and set aside.
  3. In the same skillet, add the black beans and cook for 2-3 minutes until heated through. Remove from heat and set aside.
  4. In a separate skillet, cook the eggs according to your preference (fried, scrambled, or poached). Season with salt and pepper.
  5. In a bowl, combine the diced tomato, red onion, cilantro, jalapeno, lime juice, salt, and pepper. Mix well to make the salsa fresca.
  6. To assemble the Bacon Mollete, spread a layer of black beans on the toasted bolillo halves. Place a cooked egg on top of the beans, followed by a slice of crispy bacon. Spoon salsa fresca over the bacon.
  7. Repeat the same process for the remaining bolillo halves.
  8. Serve the Bacon Mollete immediately and enjoy!
