Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 cups durian puree
  • 3 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

Directions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate bowl, beat the cream cheese and granulated sugar until smooth and creamy.
  4. Add the durian puree, eggs, and vanilla extract to the cream cheese mixture. Beat until well combined.
  5. Gradually add the heavy cream and flour to the mixture, beating until smooth.
  6. Pour the filling onto the prepared crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  8. Remove the cheesecake from the oven and let it cool in the pan on a wire rack for 10 minutes.
  9. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan.
  10. Allow the cheesecake to cool completely on the wire rack.
  11. Refrigerate for at least 4 hours, or overnight, before serving.
