  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar

  • For the cinnamon sugar crumble:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • For the whipped cream:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract


  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the diced apples.
  7. Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
  8. To make the cinnamon sugar crumble, in a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon. Stir in the melted butter until crumbly. Sprinkle the crumble mixture over the cupcake batter.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Remove the cupcakes from the oven and let them cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely.
  11. While the cupcakes are cooling, make the whipped cream. In a mixing bowl, whisk together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  12. Once the cupcakes are completely cooled, pipe or spoon whipped cream on top of each cupcake. You can also sprinkle a little extra cinnamon or garnish with a small slice of apple for decoration.
