- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar

- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups finely diced apples
- 1/2 cup buttermilk
- For the cinnamon sugar crumble:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
- For the whipped cream:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Directions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
- Fold in the diced apples.
- Spoon the batter into the prepared cupcake liners, filling them about 2/3 full.
- To make the cinnamon sugar crumble, in a small bowl, combine the flour, granulated sugar, brown sugar, and cinnamon. Stir in the melted butter until crumbly. Sprinkle the crumble mixture over the cupcake batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the oven and let them cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely.
- While the cupcakes are cooling, make the whipped cream. In a mixing bowl, whisk together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cupcakes are completely cooled, pipe or spoon whipped cream on top of each cupcake. You can also sprinkle a little extra cinnamon or garnish with a small slice of apple for decoration.
