Directions

  1. Preheat the oven to 325°F (165°C).
  2. Make sure the pig is fully thawed if frozen. Rinse it thoroughly inside and out with cold water and pat dry with paper towels.
  3. In a small bowl, mix together the minced garlic, salt, black pepper, olive oil, rosemary, thyme, and sage to create a paste.
  4. Rub the paste all over the pig, making sure to thoroughly coat the skin and cavity.
  5. Place the pig on a large roasting pan, belly side up, and tie the legs together with kitchen twine to secure the shape.
  6. Pour the white wine and chicken broth into the bottom of the roasting pan.
