This Instant Pot Barbacoa recipe provides all the flavors of traditional slow-cooked barbacoa in a fraction of the time. Perfectly tender and full of rich, spicy flavors, this dish is perfect for tacos, salads, or rice bowls.

Ingredients

  • 3 lbs beef chuck roast, trimmed and cut into chunks
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 chipotle pepper in adobo sauce, minced
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1/2 cup beef broth
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste
  • Lime wedges, cilantro, and chopped onions for serving

Directions

  1. Season beef chunks with salt and pepper.
  2. Set Instant Pot to sauté mode and brown beef on all sides.
  3. Add onion, garlic, chipotle pepper, cumin, oregano, cloves, cinnamon, beef broth, and apple cider vinegar to the Instant Pot.
  4. Seal the Instant Pot and set to high pressure for 45 minutes.
  5. Once cooked, release pressure naturally for 10 minutes, then quick release remaining pressure.
  6. Shred beef with two forks and serve with lime wedges, cilantro, and chopped onions.
