Ingredients
- 3 lbs beef chuck roast, trimmed and cut into chunks
- 1 onion, diced
- 4 cloves garlic, minced
- 1 chipotle pepper in adobo sauce, minced
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- 1/2 cup beef broth
- 1/4 cup apple cider vinegar
- Salt and pepper to taste
- Lime wedges, cilantro, and chopped onions for serving
Directions
- Season beef chunks with salt and pepper.
- Set Instant Pot to sauté mode and brown beef on all sides.
- Add onion, garlic, chipotle pepper, cumin, oregano, cloves, cinnamon, beef broth, and apple cider vinegar to the Instant Pot.
- Seal the Instant Pot and set to high pressure for 45 minutes.
- Once cooked, release pressure naturally for 10 minutes, then quick release remaining pressure.
