Ingredients
- 2 large sweet potatoes
- 2 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
- Cooking spray
Directions
- Preheat the oven to 400°F
- Wash and scrub the potatoes, then poke holes in them with a fork
- Bake the potatoes for 45-50 minutes or until they are tender
- Let the potatoes cool slightly, then cut them in half and scoop out the flesh into a bowl
- Mash the potatoes and season with salt and pepper
- Place the potato skins on a baking sheet lined with parchment paper
- Fill each potato skin with a mixture of sweet potato and regular potato mash
- Top with shredded cheddar cheese and bacon
- Bake for an additional 15 minutes or until the cheese is melted and bubbly
