Ingredients
- 1 pound rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh oregano, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- In a large pot, cook the rotini pasta according to the package instructions until al dente. Drain and rinse under cold water to cool.
- In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, Dijon mustard, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, basil, parsley, and oregano.
