Ingredients

  • 2 pounds beef chuck roast, cut into chunks
  • 1 tablespoon vegetable oil
  • 1 onion, diced

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1/2 cup salsa
  • 1 tablespoon lime juice

Directions

  1. Set the Instant Pot to sauté mode and heat the vegetable oil.
  2. Add the beef chunks and brown them on all sides. Remove the beef from the Instant Pot and set it aside.
  3. Add the diced onion, minced garlic, and minced jalapeno pepper to the Instant Pot. Sauté for 2-3 minutes, until the onion is translucent.
  4. Stir in the tomato paste, chili powder, ground cumin, dried oregano, smoked paprika, salt, and black pepper. Cook for another minute.
  5. Add the beef broth, salsa, and lime juice to the Instant Pot. Stir to combine.
