Enjoy the wonderful flavors of horchata - a Mexican rice milk beverage infused with cinnamon. This homemade version of horchata is creamy, sweet, and perfect for a hot summer day. Made with easy-to-find ingredients, this recipe will become a family favorite in no time. Serve over ice and garnish with a sprinkle of cinnamon for an extra touch of flavor and presentation.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 cinnamon stick
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Ground cinnamon for garnish

Directions

  1. Place the rice in a bowl and cover with water. Let it soak for at least 4 hours or overnight. Drain the rice and discard the soaking water.
  2. In a blender, combine the soaked rice, water, and cinnamon stick. Blend on high until the mixture becomes smooth and creamy.
  3. Strain the mixture through a fine-mesh sieve into a pitcher or large bowl. Press down on the rice solids to extract as much liquid as possible.
  4. Discard the solids and add the milk, sugar, and vanilla extract to the horchata mixture. Stir well to combine.
  5. Chill the horchata in the refrigerator for at least 1 hour or until cold.
  6. To serve, fill glasses with ice and pour the horchata over the ice. Sprinkle some ground cinnamon on top for garnish.
  7. Stir before drinking, as the rice may settle at the bottom.
  8. Enjoy your homemade horchata cinnamon rice milk!
