Ingredients

  • 4 cups tortilla chips
  • 1 cup salsa
  • 1 cup chicken or vegetable broth
  • 1/2 cup grated cheese (cheddar or monterey jack)
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1/4 cup diced avocado
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the salsa, chicken or vegetable broth, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine.
  4. Bring the sauce to a simmer and let it cook for about 5 minutes to allow the flavors to meld together.
  5. Add the tortilla chips to the skillet, making sure they are fully coated in the sauce. Cook for another 3-4 minutes until the chips soften slightly.

  7. Remove the skillet from the heat and let it cool slightly.
  8. Garnish the chilaquiles with chopped cilantro and diced avocado.
