South Indian Lentil Kootu is a traditional dish hailing from the southern region of India. Ingredients

  • 1 cup split yellow lentils (moong dal)
  • 2 cups mixed vegetables (carrots, beans, peas, cauliflower, etc.)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • A handful of curry leaves
  • 1 tablespoon oil
  • Salt to taste
  • 1/2 cup coconut, grated
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 cup fresh cilantro leaves, chopped

Directions

  1. Rinse the lentils thoroughly and soak them in water for 30 minutes.
  2. In a pressure cooker, add the soaked lentils, mixed vegetables, onion, tomatoes, green chilies, ginger-garlic paste, turmeric powder, red chili powder, and salt.
  3. Add enough water to cover the ingredients and pressure cook for 3-4 whistles or until the lentils and vegetables are cooked.
  4. In a separate pan, heat oil and add the cumin seeds, mustard seeds, and curry leaves. Let them splutter.
  5. Add the cooked lentil and vegetable mixture to the pan and mix well.
  6. In a blender, grind the grated coconut, fennel seeds, and black peppercorns into a smooth paste.
  7. Add the coconut paste to the pan and stir well. Cook for another 5 minutes on low heat.
  8. Garnish the dish with freshly chopped cilantro leaves.
  9. Serve hot with steamed rice or roti.
