- 1 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes
Directions
- Preheat the oven to 400°F (200°C).
- In a food processor, pulse the macadamia nuts until they are finely chopped.
- In a shallow dish, combine the macadamia nuts, panko bread crumbs, flour, salt, black pepper, paprika, and garlic powder.
- In another shallow dish, beat the eggs.
- Dip each mahi mahi fillet in the beaten eggs, then coat it in the macadamia nut mixture, pressing gently to adhere the nuts to the fish.
- Heat the olive oil in a large oven-safe skillet over medium heat.
- Add the coated mahi mahi fillets to the skillet and cook for 2 minutes on each side, or until the crust is golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.
- While the fish is baking, prepare the pineapple salsa by combining the diced pineapple, red bell pepper, red onion, cilantro, lime juice, honey, and red pepper flakes in a bowl. Mix well.
