Ingredients

  • 2 cups roasted cushaw puree
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup honey or maple syrup
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon sea salt
  • 2 tablespoons fresh rosemary, chopped
  • Extra virgin olive oil, for brushing
  • Sea salt, for sprinkling

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the roasted cushaw puree, almond flour, coconut flour, honey or maple syrup, eggs, melted coconut oil, vanilla extract, baking soda, cinnamon, nutmeg, sea salt, and chopped rosemary. Mix well until all the ingredients are fully combined.
  3. Divide the batter evenly among the muffin cups, filling them about 3/4 full.
  4. Brush the tops of the muffins with a little extra virgin olive oil and sprinkle with sea salt.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
