Ingredients

  • 2 cups diced rhubarb
  • 1 1/2 cups brown sugar
  • 2/3 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped walnuts

Directions

  1. Preheat the oven to 350°F and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine the diced rhubarb and brown sugar. Let sit for 15 minutes.
  3. Add vegetable oil, egg, and vanilla extract to the rhubarb mixture. Mix well.
  4. In a separate bowl, sift together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
