- 2 cups diced rhubarb
- 1 1/2 cups brown sugar
- 2/3 cup vegetable oil

- 1 teaspoon vanilla extract

- 1 teaspoon salt
- 1/2 cup chopped walnuts
Directions
- Preheat the oven to 350°F and grease a 9x5 inch loaf pan.
- In a large mixing bowl, combine the diced rhubarb and brown sugar. Let sit for 15 minutes.
- Add vegetable oil, egg, and vanilla extract to the rhubarb mixture. Mix well.
